I’m in Pittsburgh this week with my mom. She broke her arm and needed surgery. Needless to say there hasn’t been much cooking in my kitchen! At least not by me.
So in no particular order are five of our favorite easy weeknight meals for weeks when life gets in the way.
1. Garlic Roasted Shrimp. If you have shrimp in the freezer like we do this can be made without any pre-planning. Serve with veggies you have around and a yummy baguette. I don’t like leftover shrimp so this is not a good leftover lunch for us.
2. Chicken with Leeks and Apples. These ingredients are not quite cupboard staples but it can be made with chicken breasts or chicken thighs and maybe use onion instead of leek. This is ok for leftover lunch.
3. Whole Wheat Pizza Dough. Make the dough ahead, and then it is a super easy meal. The pizza is still a great leftover lunch.
5. Mexican Tortilla Thingies. This is a little work if you use dried beans and make tortillas. But if you use canned beans and put them over a grain(rice, bulgur, barley) this can be done in the time it takes the grain to cook. My favorite topping for these is the Pico de Gallo and Guac from Pioneer Woman. These are good for leftover lunches too.
