Cheddar Bacon Chive Muffins

I am not a morning person, but I love morning food.  One of my friends gets up at like 4 am to eat breakfast, drink coffee and get ready for the day.  I get up about 45 minutes before I need to get to work and so all I have time for is to shower, get dressed, pick up food for the day (which Dan puts together) and walk to work.

While I would prefer to have a delicious omelet with a side of bacon I am not ready to sacrifice my morning sleep for it.  So I get stuck with high carb breakfasts or boiled eggs.  I am now on the hunt for higher protein breakfasts. My first step is these bacon chive puffs.  These were great, but the chives were completely lost in the recipe, so I recommend using a strong herb next time or maybe more herbs.  Let me know if you find one that really shines!

 Bacon Chive Puffs

These muffins freeze really well and heat up in less than 30 second in the microwave.

3/4 cup whole wheat pastry flour
3/4 tsp baking powder
3/4 cup milk
1 egg
1 cup shredded cheese (I used cheddar)
1/3 cup precooked bacon, chopped into small pieces
3 Tbsp of chives, chopped

1. Preheat oven to 400 F. Spray the muffin pay with non-stick cooking spray.

2. In a large bowl, combine 3/4 c flour, 3/4 t baking powder, 3/4 c milk and 1 egg until batter is lump free.

3. Stir in 1 c cheese, 3 T chives, and 1/3 c bacon. Spoon batter into the prepared mini-muffin cups about 2/3 full.

3. Bake for 15-17 minutes.
