Energy Bites

I’m realizing that food makes the perfect gift for people.  Plus, it allows me to get creative in the kitchen without the pesky snacks sticking around.  This weekend was full of food for other people.  We made some butternut squash lasagna for a friend and these bites as a gift for another friend’s birthday.  It’s so much fun to be able to share an edible creation with other people.  I just hope that they enjoy the dishes as much as I do!

Energy Bites
Adapted from The Cilantropist
3/4 cup rolled oats
3/4 cup peanut butter
1/4 cup unsalted, roasted sunflower seeds
1/2 cup (or more) dried cranberries
3 Tablespoons chia seeds
1 Tablespoons honey
1/2 teaspoons salt
1/2 teaspoons vanilla extract
pnut balls14Mix all of the ingredients together with a silicone spatula until it forms a ball.  Use an ice cream scoop to make small balls and roll those balls in some extra oats.  Place the balls in a container in the fridge so that they set.  Store in tupperware for a week or two.
