Dan here today. Winter is a good time to find 5 or 10 lb bags of potatoes at the store for cheap, and since I’m part Irish, I would be betraying my heritage if I didn’t take advantage. The question, of course, is what to do with 5 or 10 lbs of potatoes once they are sitting in your living room, other than hiding them around the house and having a potato Easter egg hunt. Mashed potatoes are always a good option, of course, but they take time, and they tend to create a lot of dirty dishes. Recently, I have discovered an easier way. When I’m roasting a chicken, I peel a pound or two of potatoes, chop them up into cubes, and toss them with a couple of tablespoons of olive oil, some salt, and some rosemary. Then I put them into the oven while the chicken is roasting. Cooked for about 50 minutes at 425 deg F, the potatoes come out golden brown, crispy, and delicious. So that’s my potato story. Am I phoning this post in? Possibly. Are the potatoes still good? Yes.
