
This dish was so fantastic and refreshing. On a hot summer night I want nothing more than a light and fresh dinner.
Spinach, Salmon and Orange Salad
Vinaigrette:
1/4 cup orange juice
2 Tbsp olive oil
2 Tbsp vinegar
1/2 tsp black pepper
1 garlic clove, minced
Instructions:
Combine all ingredients in a large bowl and whisk.
Salad:
2 Tbsp lemon juice
4 salmon fillets (6 oz each)
2 tsp black pepper
6 oz fresh spinach
4 oranges, sliced
Instructions:
Preheat your grill to medium-high.
Squeeze the lemon over the salmon and add 2 T pepper. Grill salmon for 5 minutes on each side or until it’s flaky.
Combine the spinach with the vinaigrette and toss.
