This recipe originally had cilantro but Dan is part of the segment of the population that thinks it tastes like soap.  Did you know that there is a website, I hate cilantro, dedicated to people like Dan?  I guess there is a website for everyone.

I’m glad that instead of throwing away this recipe that he just removed it from the vinaigrette. The vinaigrette really tied together this dish, but is it really a surprise that I like a citrus dressing recipe?

Salmon with lemon vinaigrette

Real Simple

 

Ingredients:

10 oz box couscous

3 T olive oil

11/4 lbs piece skinless salmon fillet

1/2 t paprika

salt

pepper

4 scallions, sliced

2 T lemon juice

Instructions:

Make the couscous according to the directions on the box.

 

Heat a large skillet over medium heat and add a tablespoon of oil.  Sprinkle paprika, 1/2 t salt and 1/4 t pepper over the salmon.  Cook for 3-4 minutes on each side.

 

Combine the scallions, lemon juice, 2 T of oil, a 1/4 t salt and a 1/4 t pepper in a small bowl.  Whisk ingredients together and drizzle onto the salmon and couscous.
