Onto the shrimp dish. Shrimp is my absolute fave. It can be kind of expensive but it’s delicious and can taste so different depending on the dish. The carrot slaw in this was a little too acidic, I reduced the amount of lime juice but maybe taste test it as you go.

Shrimp with Carrot Slaw

Ingredients
- 2 Tbsp lime juice
- salt
- 1.5 lbs shrimp
- 1/4 cup sour cream
- 1/4 lbs carrots, grated
- 1 apple, grated
Instruction:
Boil water in a large pot with 3 T lime juice and 2 T salt. Once the water is boiling add the shrimp for about 3 minutes or until it is opaque.
Move shrimp into an ice bath and pat dry.
In a bowl, add sour cream, 1 T lime and 1/2 t salt. Combine the carrots and apple.
Serve Cold
