I don’t know how she does it…

I’m still slowly getting through all the pictures from last week.  You’d think with all that time off I would have had time to work on them, but alas, I did not. 

I was able to stop by my friend Jessie’s house on my way to meet up with Dan and she totally showed me a great time!

Jess is the mother of two kids under 4 (and an awesome husband, but he was in Haiti when I stopped by) and she STILL had time to put together a fabulous meal for me and our friend Jen.   (this was after a whole day at the beach!)

I can’t believe she can do all of this!  The chicken was so good!  We also paired it with some sautéed onions and peppers and cheese
 
Fresh tomatoes and sour cream and homemade guacamole.

Jess also made a delicious dessert salsa.  I need to get that recipe and share as well!

Chicken Fajitas:
Jessie’s Mom’s Recipe

Ingredients:
  • 24 oz Pineapple Juice
  • 1/4 cup Soy sauce
  • 1/4 cup Lemon Juice
  • 1/8 cup onion
  • 1/2 tsp salt
  • 1/2 tsp sugar
  • 1.5-2 lbs chicken

Instructions:
Marinate the chicken for 6 hours and grill until done to your specifications.
