staying power

I’ve never understood the people that don’t eat breakfast.  There have only been a few days in my life that I haven’t woken up ready for breakfast.

Before I started understanding food and how it really works I would have a bowl of cereal for breakfast and start getting hungry a few hours later and then have a snack.

Atkins really showed me how powerful the right combination of fats and protein is.  I was working in a building with a cafeteria when I started the diet and so I could have scrambled eggs made for me every single day.

Eggs are not quite so easy for me to make at home and transport to work (where I eat breakfast—I’m short on time in the morning)

It wasn’t until recently that I’ve found the perfect replacement.  Of course now it does include some carbs.

The combo:

  • one serving of chia seeds
  • one faux fried egg
  • 1 oz cheddar cheese
  • 1 bagel thin

This combination keeps me full for 4-5 hours and for me that’s most important!

I definitely go through phases with my breakfasts but this one is easily transportable (a little messy…but it works).

In other news all of the age group photos are up on www.bethmackenzie.com.  Now I need to organize the pictures by bib number!  So please head over and check them out!
