I’m working slowly through the bike pictures but I’m really liking how they look!

That’s why this is another short post, thought I’d share a super tasty shrimp recipe. I generally don’t like roasted tomatoes, but I liked them in this recipe, they added a perfect amount of liquid to go along with the spicy shrimp. Yum!

Creamy Rice with Roasted Shrimp
adapted from Real Simple
Ingredients:
- 2 Tbsp olive oil
- 1 finely chopped onion
- 1 cup rice
- 1 cup white wine
- salt
- pepper
- 1 lbs frozen shrimp
- 1 pints grape tomatoes
- 8 sprigs fresh thyme
- 2 cloves garlic
Instructions:
Preheat oven to 400.
Place a large saucepan over medium heat and pour in a T of oil. Add the onion and cook for about 5 minutes or until it has softened. Add the rice and the wine and stir continuously until the wine is absorbed.
Add 2 cups of water and 1/4 t of salt and pepper. Cover the pan and reduce heat to low and simmer for about 20 minutes.
Take the shrimp, tomatoes, thyme, garlic and oil and mix on a baking sheet. Roast the shrimp for 20 minutes and serve with rice.
