end in sight

The end is near with my Littlefoot photo editing.   In hindsight taking a day off after the race and not traveling the next weekend would have been smarter.  I hope people are still interested in seeing their photos! Dan has been awesome with helping me out and I’ve totally appreciated everything he’s done!

To entertain you while I keep working on these pictures, I’ll share a bean recipe from a few weeks ago.  It originally accompanied a mahi mahi recipe that I did not like, so I won’t subject you to that one!

Lemon-Garlic White Beans
 daily eats-6
  • 3 cloves garlic, minced
  • 1 tsp olive oil
  • 1 cup northern white beans
  • 1/4 cup chicken broth
  • 3 Tbsp parsley
  • 1/8 tsp pepper
  • 2 lemons, juiced

Heat a skillet with medium-high heat and place the oil on the pan.  Add garlic and sauté for a minute.

Reduce heat to medium and add the beans.  Stir for 2 minutes and then add the broth.  Then add the parsley and pepper and cook for 2 more minutes.
