mushy food verdict

Last week I was all prepared to find mushy foods and I must say that I was really looking forward to feasting on Mac n Cheese.  It’s one of my guilty pleasure foods, having an excuse to eat it made me so happy.
Then Saturday came, I was eating a steady diet of watermelon shakes, mashed potatoes, yogurt, apple sauce and ice cream.  Dan asked if I’d like some Mac n cheese and I jumped on it.  I even asked for 2 servings.  Well, that didn’t work so well.  I couldn’t finish my serving and I didn’t enjoy it at all.  I blame some of it on my lack of ability to chew.

I was so disappointed in the mac n cheese, but instead I had the opportunity to try some amazing foods.  He wanted to make sure I was happy and also is on a mission to start working on side dishes.  He says that veggies and sides go against everything he believes in because they take awhile to cook but don’t have many calories.  I’m glad he’s rethinking this position!
One of the options he made for me this weekend was cardamom coconut sweet potatoes.  Wow.  You need to make this ASAP.  They were so flavorful and delicious.  I could taste the sweetness of the coconut, the spice of the red pepper and and the uniqueness of the cardamom.  Ohhh so good!
Cardamom Coconut Sweet Potatoes
adapted from clean eating

  • 5 medium sweet potatoes
  • 3/4 cup light coconut milk
  • 2 tsp cardamom
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 1/8 tsp pepper
  • 1/8 tsp cayenne pepper

bring a large pot of water to boil.  Add sweet potatoes and let cook for 10 minutes.  Drain and transfer the sweet potatoes to the bowl for a mixer.

Add the rest of the ingredients to the potatoes and mix on medium speed until smooth.
