Chicken Fajitas

Ingredients:
- 1 red bell pepper, cut in strips
- 1 medium onion, sliced
- 2 chicken breasts, sliced into strips
- 1 t paprika
- dash cumin
- 2 limes
- olive oil
- salt and pepper
toppings/sides
- 4 tortillas
- sour cream
- guacamole
- cheddar cheese
- salsa
Instructions:
In a large bowl mix the pepper, onion chicken, paprika and cumin. Drizzle olive oil and lime juice over the mixture. Marinate for 5 minutes.
Heat your grill pan over high heat. Transfer the chicken mixture onto the grill pan and cook for about 6 minutes, until chicken is cooked through. Turn the mixture often so they don’t burn.
Warm tortillas in the microwave. Divide the chicken mixture among the tortillas and top with your choice of items. I go for the little bit of everything approach.
The most caloric parts of dinner are up to you, so that will determine how caloric this will be. The nutritionals are only for the chicken mixture and doesn’t include the tortillas.
