This was a great recipe to throw together at the last minute. We got wrapped up in enjoying the day on Sunday and forgot about dinner until pretty late, so Dan tossed this recipe from Real Simple together and it was delicious! It could use more salt and pepper (called for 1/4 t each, so use your judgment).
Ingredients:
- 1 lbs dough
- 1 lbs butternut squash, diced into quarter inch thick squares
- 1/2 red onion
- 1/4 c pine nuts
- 1 T fresh thyme
- 1 T olive oil
- salt and pepper
- 1 1/2 c grated cheddar and gruyere cheese
Instructions
Preheat oven to 400.
Roll dough into a large oval and place on a pan dusted with cornmeal.
Combine the rest of the ingredients in a large bowl. Spread the squash mixture over the dough and bake for 25 minutes.
