Sage and Onion Stuffing

I totally forgot to post this recipe!  When we made it, there was WAY too much olive oil.  If we make it again, we will reduce the oil by a lot and change the sausage to chicken sausage.

Sage and Onion Stuffing
adapted from Jamie’s Food Revolution
  • 2 onions
  • fresh sage
  • 1/2 of a large loaf of whole wheat bread
  • olive oil
  • 1 Tbsp butter
  • 1 3/4 lbs sausage
  • salt
  • pepper

Preheat oven to 400.

Chop onions, remove sage from stalk and slice.  Remove the crust from the bread and tear the rest of the bread into large chunks.

Fill a bowl with cold water.

Heat a large frying pan over medium heat, add just a little olive oil and the butter.  Add the onions and cook for 7-10 minutes and then stir in the sage leaves.
Dip the bread into the bowl of water and squeeze out extra water.  Add the wet bread into the pan. Stir around for a couple of minutes making sure there are no clumps.  Remove the bread mixture from the pan and set aside to cool.

Once the bread mixture is cooled, add in the sausage and season with salt and pepper.  Put the mixture into a baking pan that is just barely greased (there is enough grease in there already!)  Cook for 50 minutes.
