Perfect Roast Pork


This was NOT a photogenic meal.  It was really tasty and lets the pork really shine.  The original recipe called for some gravy to be made, but we don’t love gravy so we skipped it.

Perfect Roast Pork
adapted from Jamie’s Food Revolution

Ingredients:
  • 4 lbs pork loin
  • 1 bulb of garlic
  • fresh rosemary
  • olive oil
  • salt
  • pepper
 
Instructions:
Let the pork rest on the counter for about 30 minutes before you start cooking.  Preheat oven to 475.

Break up garlic cloves but leave them unpeeled.  Place garlic and herbs into the middle of a roasting pan and drizzle with olive oil.
 
Season pork with olive oil, salt and pepper.  Place pork on top of garlic.

Place roasting pan into the oven and immediately turn temperature down to 400 and cook for an hour and 20 minutes.  Halfway through, baste the pork and add water to the veggies if they look dry.  Let the pork rest for 15 minutes, covered by foil and a kitchen towel.
