Fig and PB Dough balls



I have been dreaming of these since Ashley gave us some at the CO blogger get together.  I made a few changes  to up the fiber content.   Each one of these babies has 150 calories and 4 g of fiber.  Not to bad!  The figs add a perfect sweet combination with the salt of the peanut butter!

  • 3/4cup peanuts
  • 2 Tbsp maple syrup
  • 1/4 cup agave
  • 1/2 cup oats
  • 2T peanut butter
  • 1/4 cup ground flax meal
  • 1/2 tsp cinnamon
  • 2 Tbsp Chia seeds
  • 6 dried figs
 
  1. Grind nuts in the food processor until they become fine crumbs.
  2. Add the rest of the ingredients and turn on, scrape the sides occasionally.
  3. The mixture will turn into a ball.  I threw the ball into the fridge overnight and rolled into balls in the morning.  The balls were crumbly but after some time in the fridge stayed together.
  4. Store in the fridge.
