Chinese Chicken

This tastes just like a healthy version of General Tso’s chicken.  General Tso’s is my weakness and I was really excited to discover that I can still enjoy it without the thousands upon thousands of calories.
Chile-garlic Chicken Legs

  • 1 Tbsp vegetable oil
  • 4 chicken legs (separate the drumsticks and thighs)
  • 4 garlic cloves, chopped finely
  • 3/4 cup white vinegar
  • 1/2 cup soy sauce
  • 1/2 tsp red-pepper flakes
  • 1/4 cup sugar
Heat oil in a large saucepan over medium-high heat.  Add chicken with the skin side down and cook until the skin is crisp.  This should take about 5 minutes.  Flip it to skin side up and cook for an additional 2 minutes.  Remove the chicken and place on a plate.

Discard all but 1 T fat from the pan.  Add the garlic and cook for about 30 seconds.  Stir in vinegar, soy sauce, red-pepper flakes and sugar.  Return the chicken to the pan with the skin side up.  Bring the liquid to a boil, cover the pan and reduce heat to low for 15 minutes.  Uncover and raise the heat to medium and cook for 10 minutes until the sauce is reduced by half.
