Ravioli with spinach and bacon


This is turning into pasta week. I try not to eat these dishes back to back, but I do enjoy them when we have them!  The best part is that I try not to eat a whole serving so more for Dan!

Ravioli with spinach and bacon
from Real Simple

Ingredients:
  • 1 lbs of ravioli
  • 6 slices of bacon
  • 2 Tbsp olive oil
  • 2 cloves of garlic
  • 8 cups fresh spinach
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 Tbsp lemon juice

Instructions:
Cook the ravioli according to the package instructions.

Cook the bacon in a skillet over medium-high heat until it is crispy.  This should take 6-8 minutes.  Blot off extra grease with a paper towel.

Clean the skillet and heat oil over medium heat.  Add the garlic and stir occasionally until browned (not burned).  This should take a minute or two.  Add the spinach, salt and pepper.  Cook until the spinach is wilted.  This should take one to two minutes.

Stir the bacon and lemon juice into the spinach and then spoon over ravioli.
