We were first introduced to these cookies when Dan’s little brother’s girlfriend sent them to him for Christmas. We immediately thought that they were molasses cookies but were corrected when I asked Kristen for the recipe to put up for the bake sale for Haiti. Either way we thought they were delicious. I hope Jan liked these!
Not Molasses Cookies
Ingredients
- 1-1/2 cups semisweet chocolate chips
- 1-1/2 cups packed brown sugar
- 3/4 cup vegetable oil
- 3 eggs
- 1-1/2 teaspoons vanilla extract
- 1-1/2 cups all-purpose flour
- 1-1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 cup and 2 tablespoons chopped walnuts
- 3/4 cup sifted confectioners' sugar
Directions
This recipe's Ingredients were scaled to yield a new amount. The directions below still refer to the original recipe yield of 4 dozen.- Melt the chocolate chips and combine with the brown sugar and vegetable oil. Add the eggs one at a time and beat well. Stir in the vanilla.
- Combine the flour, baking powder and salt. Add flour mixture to the chocolate mixture. Stir in the chopped walnuts. Chill dough for a few hours.
- Preheat oven to 350 degrees F (175 degrees C). Grease baking sheets.
- Drop teaspoonfuls of dough in confectioners' sugar and roll to coat. Place cookies on the prepared baking sheets. Bake at 350 degrees F (175 degrees C) for 10 to 12 minutes. Let cookies cool on racks.
