Chocolate Cheesecake

My mom loves making elaborate Christmas meals for us, and dessert is the ultimate piece of the meal.  In recent years she has been making us a baked Alaska, but this year she changed things up (but kept up the chocolate) and made us chocolate cheesecake.  Little did she know that this is Dan’s most favorite food in the world.  He has two great food loves. 1) chocolate 2) cheesecake.  This was definitely a crowd pleaser!

Chocolate Cheesecake
Adapted from Emeril Lagasse

  • 4 eggs
  • 1 cup sugar
  • 3 8-ounce packages cream cheese, room temperature
  • 1 1/2 tsp vanilla extract
  • 1 cup sour cream
  • 4 oz melted and cooled bittersweet chocolate
  • 4 oz melted and cooled semisweet chocolate
  • 1 package famous chocolate wafers, crushed


Instructions:
Preheat oven to 350
Spray a spring form pan with pam and pat in the chocolate crumbs.  In a mixing bowl combine cream cheese, sugar and vanilla extract and beat until light and creamy.  Add eggs to the cream cheese mixture one at a time.  Then add sour cream and the melted chocolate.  Pour all into the spring form pan.

Bake for an hour and five minutes.  Remove and cool.  Once it’s completely cool refrigerate for at least four hours.  Serve with strawberries and whipped cream.
