The Best Silver Dollar Pancakes

This simple, but delicious recipe has been passed down through the generations in my family.  These are still my most favorite pancakes that all other pancakes are compared with.
The Best Silver Dollar Pancakes
  • 2 cup flour, sifted
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 Tbsp sugar
  • 2 eggs, separated
  • 2 cups buttermilk
  • 2 Tbsp oil

2. Then sift together the sifted flour, salt, baking soda and sugar.

3. In a mixing bowl (or kitchenaid) beat egg whites until stiff. 

4. Then add the yolks. 

5. Fold in remaining ingredients. 

6. Cook on an electric griddle and make sure not to turn the heat too high.

Tips: These pancakes are best when made in silver dollar sized.  Use two spoons to get the best size.  Also, no matter what, resist the urge to smoosh the pancakes! 

The final product should be tall pockets of airy deliciousness.
