We first found this recipe attached to a stuffed chicken breast. The stuffed chicken breast was a TON of work and not all that tasty. But the pasta was fresh and delicious!
Lemon-Basil Pasta
From Clean EatingIngredients:
- 2 cloves of garlic, minced
- 3 tomatoes diced
- 1/2 package whole wheat spaghetti
- 4 T fresh basil
- 1 Tbsp olive oil
- Lemon Juice and Zest (about a lemon’s worth)
- 1.5 Tbsp of grated parmesan cheese
Instructions:
Cook pasta according to boxed directions. Once the pasta is drained place it in a bowl and add the basil, oil, lemon juice, zest and two cloves of garlic. Top with tomatoes and parmesan cheese.
