Cauliflower and Gnocchi

I’m STILL craving roasted sage from when we made cauliflower and gnocchi on Sunday.

There really are amazing recipes in the October 2009 Real Simple!  So far we have made: Sausage and white bean casserole, tilapia with peppers and olives, ravioli with walnuts and apples, and the ravioli with pear version, shrimp pot pie and lamb with minted spaghetti squash

We love real simple because the ingredient lists are short and the recipes are consistently flavorful.

Gnocchi with Roasted Cauliflower and Sage

1 head cauliflower, cut into florets (or more, there was definitely NOT enough cauliflower in the recipe)
12 fresh sage leaves (maybe add more, I wanted more!)
3 Tbspolive oil
1/2 tsp salt
1/4 tsp pepper
1 lbs gnocchi
1/4 cup grated parm cheese (or pecorino.  We are in love with pecorino)

1. Preheat oven to 400

2. Cook the gnocchi according to the directions on the package.

3. Combine cauliflower, sage, oil, 1/2 t salt and 1/4 t pepper.  Spread out on baking sheet. Roast for about 25 to 30 minutes or until the cauliflower is browned and lightly crispy.

4.  Divide up the gnocchi and cauliflower and top with parm or pecorino.
