This recipe was supposed to be a summer dish since it was published in July 2009 Real Simple. This is another dish that I think is best when eaten in smaller portions. The magazine recommends 4 servings, but we turned it into 8. It was the perfect size(for me-Dan had two servings, or by these calculations, 4).
Grilled Sausage and Polenta
Ingredients - 2 Tbsp lime juice
- 1 Tbsp olive oil
- 2 tsp honey
- salt
- pepper
- 1 sliced bell pepper
- 1 thinly sliced small red onion
- 8 small links of Italian sausage
- 1 pound of store bought polenta
Instructions:
Heat grill or grill pan to medium high heat. Grill the sausages for about 12 minutes or until charred and cooked through. When you have about 6 minutes left, oil the pan and add the polenta. The polenta should need 2-3 minutes per side.
Use a large bowl to mix together the lime juice, honey, oil, a half teaspoon of salt and a quarter teaspoon of pepper. Whisk ingredients until the honey is completely dissolved. Then add the bell pepper and onion and let it marinate for 15 minutes.
