Gnocchi


We found this recipe in a December 2007 Real Simple Magazine.  I am a sucker for gnocchi.  Probably because I don’t get it very often!  The way the chicken was cooked made it totally tender, but the chicken skin was also really soft and I find that a little gross.  So I discarded that!

Smoky braised chicken and gnocchi

Ingredients:
  • 4 chicken legs
  • salt and pepper
  • EVOO
  • 4 cups low sodium chicken broth
  • 1 T smoked or hot paprika
  • 2 yellow onions
  • 1 pound gnocchi

Instructions:
Preheat oven to 400.

Pat chicken dry and then sprinkle with 1 t salt and 1/2 t pepper.

Heat oil in a large ovenproof saucepan over medium-high heat.  Add the chicken, skin-side down, and cook for 5 minutes until the skin is crisp.  Turn the chicken and add the broth, paprika, and onions.

Transfer the saucepan to the oven and cook uncovered for a half hour.

Add the gnocchi and cook for 15 additional minutes or until the gnocchi is fully cooked.

I L.O.V.E gnocchi!!! Did you make your own or buy premade? I've yet to find a decent premade version.

If you ever come across it, you GOTTA try pumpkin gnocchi! I'm sure Dan can a recipe to turn it into something savory or sweet!

This looks so yummy! I too am a fan of gnocchi. Back in my dating days, gnocchi was something I'd make for guys when I first cooked for them. Seriously, so much freaking work to make them from scratch lol.
