Easy appetizer recipe

Well, there are every day foods and sometimes foods.  This is a sometimes food.  But, I had bought the ingredients for Thanksgiving but ran out of time.  So now is my time to try it.  It was helpful that Dan needed 3200 calories at 5pm.  So here goes my creation. 

Baked brie with pomegranate-cranberry sauce in puff pastry
Oh boy.  This was tasty, I could definitely taste the pomegranates at times.  I think instead of making one big wheel, I’d make individual bites, those are easier to cover with puff pastry and easier to eat.  Overall we enjoyed the flavors a lot and Dan even hit his calorie target!

  • 1 cup sugar
  • 1 1/2 cup water
  • 1 bag cranberries
  • 1 cup pomegranate
  • 1 wedge of brie
  • 2/3 puff pastry sheet

Instructions for pomegranate-cranberry sauce:
Boil water and sugar and then add cranberries and pomegranate.  Let mixture return to a boil and then reduce the heat.  Let it simmer for about 20-30 minutes, stirring occasionally. 
Once it reaches desired consistency, take off the heat and strain excess liquid (I left this aside to make jelly).

Take the pulp mixture and let it cool completely.  You will only need enough to cover the top of the brie.

Preheat oven to 375.

Place brie on top of the puff pastry and top with pomegranate-cranberry sauce.  wrap up and bake for 10-15 minutes

No nutritionals calculated, too much guestimation.  However, I won’t be making this again for just us, it’s a party dish.  Let me just apologize again for how ugly it was! I hope that helps all of you from getting tempted by this dish!
