Chicken Pieces with Lime

 This recipe comes from the Frugal Gourmet and is an example of how food can be great without salt!

Chicken Pieces with Lime
This is definitely an old standby for us.  So delicious when you need a break from chicken breasts!

  • 6-8 chicken thigh pieces (or breasts)
  • 2 T EVOO
  • 1/2 t whole thyme
  • 2 T lemon juice
  • pepper
  • 2 limes cut into wedges

Place the chicken pieces in an oiled baking dish and mix with EVOO, thyme, lemon juice and pepper.  Bake at 375 for about 53 minutes or until chicken is golden.

Garnish with wedges of lime.  Squeeze lime over chicken piece.
