I can’t remember ever having Brussels sprouts so we tried a recipe that we found in Eatingwell. Our fingers were crossed as we tried them for the first time! Hey, anything is good with bacon, right? Verdict: Brussels sprouts were better than I expected, although I realized that I do not like onion in recipes.

Sautéed Brussels Sprouts with Bacon & Onions
Ingredients:
- 2.5 lbs trimmed Brussels sprouts cut in half or quartered
- 4 slices of bacon cut into 1 inch pieces.
- 1 Tbsp EVOO
- 1 onion, diced
- 4 sprigs thyme
- 2 tsp thyme leaves, divided
- 1 tsp salt
- pepper
- 2 tsp lemon juice
Instructions:
- Bring a large pot of water to a boil. Cook sprouts for 3-5 minutes until tender. Drain the water out.
- Cook bacon in microwave and blot out extra grease.
- Heat burner to medium heat with a skillet with oil on it. First add onion, cook till soft, not browned. This should take 4 minutes.
- Stir in thyme sprigs, salt and pepper. Increase heat to medium high and add the Brussels sprouts and stir occasionally until tender and warmed through. This should take about 3 minutes. Remove the herb sprigs. Add the bacon, thyme leaves and lemon juice and toss.

This serves 10 with 3/4 c servings.
