I will have to admit that I’ve never had Chicken Cordon Bleu before. Of course, I’m sure this statement will prompt my dad to remind me of a time I had it. So I’m sorry if I’m wrong! It’s fun that these blog posts are prompting my family to share more stories of my life growing up.

Quick Chicken Cordon Bleu
Ingredients:
- 4 chicken breasts
- 1/2 tsp pepper, divided
- 1/4 tsp salt
- 1/3 cup shredded Gruyere cheese
- 2 Tbsp reduced fat cream cheese
- 1/4 cup coarse dry whole-wheat breadcrumbs
- 1 Tbsp chopped fresh parsley
- 4 tsp EVOO
- 1/4 cup ham
Instructions
- Preheat oven to 400
- Sprinkle chicken with 1/4 tsp pepper and salt. Combine cheese and cream cheese in a bowl.
- Combine the remaining 1/4 tsp pepper with breadcrumbs, parsley and 2 tsp oil in another bowl.
- Heat the remaining 2 tsp oil in a large, ovenproof nonstick skillet over medium heat
- Cook the chicken until browned on both sides. This should be about 2 minutes per side.
- Move the chicken to the center so all pieces are touching.
- Spread with the cheese mixture, sprinkle with ham, then top with the breadcrumb mixture.
- Bake until the chicken is no longer pink in the center. This should be about 7 minutes.
