Ravioli with Apples, Walnuts and Goat cheese

Finally, I’m sharing the recipe Dan and I tried out Saturday night!  Another delicious recipe from the October issue of Real Simple.  Since I had just bought some goat cheese I decided to make a bit of a tweak.

Ravioli with Apples, Walnuts and Goat Cheese
This whole meal is a bit higher calorie than I usually like.  To rectify that I had a partial serving.  It was really tasty and I love the added punch the goat cheese added to the mixture.  Dan had it the traditional way with parm cheese and he enjoyed that quite a lot.

1 pound of cheese ravioli
2 T olive oil
1/2 c walnuts-chopped
1 crisp apple cut into matchsticks
1/2 c parsley
salt and pepper
1/2 oz of goat cheese
1. Cook ravioli according to directions.
2. In another skillet heat the oil over medium heat.  First add the walnuts and cook, stirring often, until lightly toasted and fragrant, 4 to 5 minutes.
3. Add the apple, parsley, goat cheese, 1/2 t salt and 1/4 t pepper and toss to combine.  Spoon over the ravioli and mix the ingredients around the ravioli.
