In food news, I have a confession to make. I have always hated squash. All squash but specifically zucchini, but the dislike has always extended to all squash. When I was low carbing sweet potatoes were not allowed, but squash was. I collected squash recipes and tried to build up the courage to make them. I never got the courage.

This is what is so surprising about the food I’ve eaten today (and my earlier post). I do not know what happened, I am definitely crediting the chef, but Dan has made some amazing squash. They were on sale last week and so he bought a ton. Boy am I grateful! I had squash for lunch and dinner!

Breakfast, however; was non-squashy. I had my usual Mix 1 and All bran buds.

One of my coworkers brought in pumpkin bread, so I had a little less than half. It was OK. Just too much food for my morning.
I didn’t get lunch until after my doctors appointment so I was able to eat lunch with Dan. Butternut Squash and apple soup! Yum! I have to post this recipe!

Dan also made some pumpkin seeds. Yum.

For an appetizer, Dan made Roasted Butternut Squash with lime and rosemary. I wrote this recipe down during my low carb phase but never got around to making it.

The main course for tonight is apple braised pork tenderloin with bulgur risotto.

Bulgur risotto is really really good! I forgot it wasn’t rice!

This is a total burst of fall flavors. Dan says it’s super easy to make too! The recipe will come soon!

Not to get super schmaltzy or whatever. But, I love my diet. My new elliptical makes it easy for me to get some movement in. And I have never felt this free about the food I eat. I have never had so many amazing food options and flavors. I’m super excited that Dan loves cooking and so that this will continue on for our lives. Of course I’ll be doing the dishes when he goes back to work!
