apple cranberry crisp


This delicious dish smells/tastes like apple pie with a punch.  We found this recipe in Martha Stewart’s Every Day Food magazine.  We’ve eaten it both as dessert and breakfast!

This is a calorie dense dessert and so I’ve been eating a half serving and Dan has been eating it whenever he feels like!


Apple and Cranberry Crisp
Serves 8(or 16 if you want to save on calories)

Ingredients for fruit mixture:
  • Pam or butter for the baking dish
  • 2 1/2 to 3 pounds sweet, firm apples, peeled, cored, and cut into 1/2-inch dice.
  • 12 oz (frozen) cranberries
  • 1/2 c sugar
  • 2 T all-purpose flour
  • 1 t pure vanilla extract
  • 1/4 t grated orange zest
  • 1 T fresh orange juice

Instructions for fruit mixture:
  • Preheat the oven to 375, grease the 13 inch baking dish
  • In a large bowl, combine all of the rest of the ingredients.  Transfer to baking dish and sprinkle with topping(see below).
  • Bake until topping is browned and juices are thick and bubbling around the edges.  This will take approximately 55 to 60 minutes.  Let it cool before serving

Ingredients for the Crisp Topping
  • 3/4 stick cold unsalted butter, chopped into small pieces
  • 2/3 c all-purpose flour
  • 2/3 c rolled oats
  • 3/4 c packed light-brown sugar
  • 1/2 t ground cinnamon
  • 1/2 t ground nutmeg
  • 1/4 t salt

Instructions for the Crisp Topping
Put all ingredients in a large bowl and mix on low until coarse crumbs form.
