Walnut Blueberry Banana Bread
This recipe isn’t hard to make. Basically you just have to combine ingredients and bake!
Ingredients:
1 tsp baking soda
1/2 tsp salt
3/4 cup spelt flour
3/4 cup whole wheat flour
1 tsp orange rind
1 mashed banana
2 egg whites
1/3 cup agave nectar
3/4 cup ground flaxseed meal
1 cup buttermilk
1 cup blueberries
1/2 cup chopped walnuts
Directions:
1. Start out by preheating the oven to 375 degrees.
2. In a large bowl, mix together 1 tsp baking soda, 1/2 t salt, 3/4 c spelt flour and 3/4 c whole-wheat flour.
3. Add in a teaspoon of orange rind (pull out with a fork to make sure it’s not clumpy-the rind will want to stick together).
4. In a separate (larger) bowl, stir together 1 mashed banana, 2 egg whites, 1/3 c agave syrup, 3/4 c ground flaxseed meal, 1 c buttermilk
5. Add the dry ingredients to the wet ingredients. Once it is combined, gently add 1 c. blueberries and
a half cup of chopped walnuts.
6. Pour the mixture into a loaf pan and bake for 45 minutes.
7. Let bread cool and cut into 10 slices.
