Happy Birthday Mom!

Oh boy, I woke up at 4:45 this morning.  I could not fall back asleep! What is wrong with me?  Today was such a busy day that I am just now feeling tired.  At least Friday went by super fast! 

When I woke up this morning we realized we had another food tragedy.  The perfect Salt & Pepper Chicken we had last night was left out!  Crap.  It was cold last night, but not below 40 degrees.  We really hate wasting food!  So, my food was adjusted accordingly.  Once again I had a very high calorie breakfast (450 cals)  This held me perfectly until lunch.  I am totally seeing how the more I eat earlier, the less desperate I am to eat at the end of the day.  The big breakfast included a Mix 1, grapes, Fiber One Honey Clusters and coffee.

Lunch was more Bulgur, Mint and Parsley salad, a Pear and Lindt White chocolate and coconut chocolate

Dinner was leftovers again.  I will admit a few days later the Eggplant Parmesan with Bulgur and Pine Nuts is delicious.  The basil in the bulgur leaves a fantastic last impression!
For some reason I’m low on calories.  Guess who gets to eat air popped popcorn tonight! 

Tonight is definitely an early-to-bed-to-make-up-for-last-night evening.  What are you doing this glorious Friday night?
