easy recipe for….

Gosh, I have some reviews and a giveaway coming up but hubby came down with the flu and so our routine is off.  Gosh cooking for yourself is hard!  But I overcame and made a delicious dinner!

Today was another incredibly busy day and I missed part of my lunch!  But thanks to a well timed nonfat latte.  Those things really pack on the calories! Did you know that a Light Pumpkin Spiced Frappuccino is fewer calories than a Light Pumpkin Spiced Latte.  How did that happen?  I decided today to order small nonfat lattes instead of medium and that really helped my calorie intake to stay where it needed to be.

Breakfast was a piece of the Walnut Blueberry Banana Bread, grapes and all bran bran buds.  Yum!

I was running out the door for lunch so I barely got to eat my chicken.
I came home to some fun packages, food buzz sent me some loaves of Nature’s Valley bread.  I think I’m going to make some French toast for breakfast on Friday.  Doesn’t that sound delicious?  IMG_2348

It has been so long since I have been responsible for my dinner that I was at a loss on my way home today.  So, I went for a quick and easy option.  I picked up some bertolli light ravioli and shrimp. 

Of course I made a bunch of rookie mistakes, like turning on the wrong burner so my empty pan was quickly heating up!  Poor sick Dan must have been going crazy seeing me mess with his kitchen!IMG_2355 For the shrimp, I sprayed the pan with olive oil spray and sprinkled salt and pepper and garlic powder(liberally) on the shrimp.
This was a pretty quick and easy dinner and it definitely satisfied.
Before I got started on dinner, I hopped onto the elliptical for 50 minutes! Go me!  I love this new set up, the time went by so quickly, I got so much done!

At the grocery store I also found another treat.
Edy’s (which is actually Dryer’s here, but I can’t get used to it) Slow churned pumpkin ice cream!  It tastes just like pumpkin pie.  There is no difference!
Sick husband has been downing the ice cream like it’s going out of style, but hey this is good.  The more he eats the less I eat!
