Chicken with Leeks and Apples

We found this recipe in the October 2008 Real Simple Magazine.  We started making this recipe with dark chicken, but now that I have stopped enjoying dark meat chicken we decided to switch in chicken breasts.  Yum!

Chicken with Leeks and Apples
The recipe serves 8
  • 4 chicken breasts (or 8 small chicken thighs and drumsticks)
  • 4 crisp apples, quartered
  • 2 leeks
  • 6 sprigs fresh rosemary
  • 2 tablespoons olive oil
  • 1 t salt
  • 3/4 t pepper
Heat oven to 400 degrees.
Toss all of the ingredients and place on a large baking sheet (if you are using dark meat put the skin side up).
Roast chicken about 45 minutes.  Chicken should be cooked through and apples and leeks should be tender.

Look we should really pick different recipes to try. lol :) I picked this one out to make, but I know Sean wont eat it. BRAT! lol Looked like it was a winner, winner, chicken dinner! LOL
