Lazy Saturday

I have a growing list of To do’s for the house, so today I’m conquering them!First off, I’m kind of neurotic about my recipes that we pull from magazines, so I just organized them all and put them in our “recipe book”.  This is such a better way to do things than keeping all the magazines.  Also, I’m finally listening to the feed from last weeks Healthy Living Summit.  I wish I could have been there, so much great information.

 

Interestingly enough, I have been REALLY good with food today.  I think the key was my breakfast.  See, I’ve been short of fiber at the end of the day and so instead of dessert, I’ve had a All Bran Bran Buds and dried blueberry cereal.

So, instead I decided to start the day with All Bran Bran Buds (just like grapenuts) Just Blueberries (dried blueberries) chia seeds and Oikos Vanilla yogurt (I ran out of coupons but I am addicted….)

This had 18 g fiber.  It was great flavors and great textures. yum! (plus only 230 calories)

 

Around lunch time I experimented with a sweet potato. Sweet potato chips!  I sprayed them with olive oil, salt, pepper and garlic powder.

If I could have figured out our mandolin these would have been SO much better uniformly sized.  I cooked them at like 425 for 20 minutes.food 034

Yum!  I know I need to find something else to eat, but I frankly don’t feel like it. I do need to go to a store and get contact solution (for real).
