Jo, you were right...

there was absolutely no reason to go to Cheyenne.  Let me start from the beginning.  First, don't forget about the giveaway! The morning started out with a breakfast experiment.  Oikos Blueberry yogurt, dried blueberries, flax and granola.

As a disclaimer, I do have coupons from Stonyfield Farms, but I forgot them.  My fave store, Sunflower Farmers Market, was having a sale: 4/$5  I got two :)
I think mix in fruits are just not for me...
The next one I'm trying is vanilla, I'll let you know what I think!  This mixture kept me full for awhile, I had a few handfuls of trail mix, and I hopped on the elliptical for a few minutes of cardio (I'm doing Chubby Chicks 10 minutes a day challenge)  I get so bored on my elliptical that I need to start small
Isn't that the weirdest looking thing? I haven't fallen off once! And for me that's a challenge!  Hubby came home around one and we decided to have a quick snack before we headed to Cheyenne for Linner....
We brought the trail mix, which we decided was unsatisfying. So most of that stayed in the bag.  Just a bad combo of things.  Oh well, better luck next time.  So, powered by the celery and trail mix we started off on the 1.5 hour drive to Wyoming...and hit traffic.  We think a camper was demolished, the debris was insane.  When we finally arrived in Cheyenne starving and anxious for linner it was almost 4 pm.

We walked up to the restaurant that hubby found and saw that it was closed.  The other potential place closed at 4.  Finally hubby read about a greasy spoon in a train car that was the best of Cheyenne (not too hard it seems because the only other restaurant we saw was a Subway).  We weren't feeling a greasy spoon.  Then hubby said the magic words: Moules et Frites.  And we were off, back to Denver, to go to Le Central.  Yes, we drove 3 hours to eat Linner (but by then it was definitely Dinner) 3 blocks from out house.

Hubby had been dreaming about the Fromage Moules et Frites that I got last time, so we decided to split an order and then order an entree.
That's hubby's hand you see, he couldn't wait for me to take a picture to start eating!  (yes the fries are strategically positioned away from me, I had a few but focused on the main event) Since we were having an appetizer and such a big appetizer I knew I wanted a smaller-ish entree so I ordered the Vegetarian Plate: Sun-dried tomato crepes layered with ratatouille, asparagus and goat cheese, accompanied by couscous, all topped with a fresh basil pesto
My camera doesn't like dark places.  So, this doesn't do this justice.  I ate about half of the crepe and a bite or two of the cous cous.  I swear, hubby loves this new system of me eating half my dish!  I did have a bite of his.  He ordered: Slow roasted leg of lamb, sliced to order, accentuated with a honey and fresh lavender infused demi-glace
You never thought you'd see an action shot with food, but here you go.  That is hubby's fork in motion.  Doesn't he know I'm a food blogger and have to take pictures before he eats?

So, that, in a nutshell is our nice 'relaxing' saturday.  Tomorrow will be more relaxing, I only have to drive to Boulder! And I know the trip will be worth it.
