Wow that green monster filled me up! I actually didn't finish it, I think the 2 T of
chia seeds were too many since it turned into pudding. Oh well, the key was to be full, and I was!
To continue my day of adventures in the kitchen, I decided to mix up the pimento cheese I decided to play around with my
grandmother's version and Bites and Bowls
version and my recipe included:
- 3 spoonfuls of light sour cream
- 2 T pimentos
- 6 oz cheddar cheese
- couple of shakes of red pepper
- splash of lemon juice
- Each serving has about 100 calories, 1 carb 8g protein

I put a couple of scoops onto a piece of
Arrowwheat Light bread and put it on a heated saute pan. A few minutes on each side and the cheese melted beautifully. I served it with some bread and butter pickles. YUM!

This meal reminds me so much of all my summers at my
grandmother's beach house, we'd come back from a morning at the beach and she would whip up some pimento cheese sandwiches with homemade bread and butter pickles. She was a southerner so none of her recipes were really all that healthy, so I decided to lighten up the recipe by switching the mayo for light sour cream. Still tastes delicious!
Of course the recipe serves 8 or so, and so I have a whole ton leftover. Dinner for another day!
