Wow that green monster filled me up! I actually didn't finish it, I think the 2 T of chia seeds were too many since it turned into pudding. Oh well, the key was to be full, and I was!

To continue my day of adventures in the kitchen, I decided to mix up the pimento cheese I decided to play around with my grandmother's version and Bites and Bowls version and my recipe included:
- 3 spoonfuls of light sour cream
- 2 T pimentos
- 6 oz cheddar cheese
- couple of shakes of red pepper
- splash of lemon juice
- Each serving has about 100 calories, 1 carb 8g protein
Of course the recipe serves 8 or so, and so I have a whole ton leftover. Dinner for another day!
